BOMBOLONI :also known as krapfen but here in Tuscany called Bomboloni which sounds cute nice and soft, and is a real sweet treat. Rolled warm in granulated sugar they can be plain or filled with custard, although here they are also made into a huge pancake with a hole in the middle. CENCI : simple crunchy light also called Chiacchiere” for their crunchiness. Without them the Carnival atmosphere is gone.

A Typical Tuscan sweet treat ina a crispy wafer as thin as a wafer. It smells of anise and is golden yellow in color. It’s packaged by vendors on the street during the parade of floats.
Originally from the Pistoia area, these sweets are called Brigidini di Lamporecchio and pair very well with Vin santo whose name comes from the Convent6 of santa Brigida in Pistoia (or Lamporecchio) whose nuns invented thsi dessert by adding a little anise to the dough
RICE FRITTELLE: Gnammmmm as we say here, the most delicious and beloved. They are especially prepared for Carnival and San Giusepe Day . Made from cooked rice kneaded and fried in very hot oil
